  • 1 cup lime juice (about 34 large limes)
  • Salt to taste
  • 1 small red onion (thinly sliced)
  • 1 teaspoon white vinegar
  • 1 cup water
  • 1/2 cup lime juice (reserved from cooking the shrimp)
  • 3 cloves garlic (chopped)
  • 3/4 cup fresh cilantro
  • 1 large jalapeno pepper (chopped)
  • 1 serrano pepper (chopped)
  • 1 medium cucumber (peeled, deseeded, sliced into crescents)
  • 3 radishes (thinly sliced)
  • 2 serrano peppers (thinly sliced)
  • Chopped fresh cilantro
  • Spicy chili flakes

Instructions

  1. Marinate the shrimp: In a mixing bowl, combine lime juice and salt. Add shrimp and let marinate for about 15 minutes until opaque.
  2. Prepare the marinade: In another bowl, mix reserved lime juice, white vinegar, chopped garlic, cilantro, jalapeno pepper, serrano pepper, and salt.
  3. Combine ingredients: Drain excess marinade from shrimp and add them to the marinade mixture along with sliced red onion. Stir gently.
  4. Add vegetables: Fold in cucumber crescents and mix until well combined.
  5. Serve: Transfer to a serving platter and garnish with additional cilantro and chili flakes. Enjoy immediately!
