  • 1.5 pounds beef tenderloin
  • 1 cup apple cider
  • 1 medium onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 2 large sweet potatoes
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon thyme
  • ¼ cup heavy cream or milk
  • ¼ teaspoon cinnamon (optional)
  • 1 tablespoon cornstarch (optional)

Instructions

  1. Marinate the beef medallions in half of the apple cider, minced garlic, thyme, salt, and pepper for at least 15 minutes.
  2. Boil peeled and cubed sweet potatoes in salted water until tender (about 15-20 minutes).
  3. Sear marinated beef in olive oil over medium-high heat for 3-4 minutes on each side; set aside.
  4. Sauté sliced onions in the same skillet until softened; add reserved marinade and remaining apple cider, then simmer.
  5. Return beef to skillet; cover and cook until fully cooked (internal temperature of 145°F).
  6. Mash drained sweet potatoes with butter, cream or milk, salt, and optional cinnamon until smooth.
  7. Serve the beef over mashed sweet potatoes and drizzle with sauce.
