  • 1/8 cup brown sugar (packed light or dark)
  • 10 tbsp unsalted butter (melted)
  • 2 cups apple cider (reduced down to 1/2 cup)
  • 24 oz cream cheese (room temperature)
  • 3/4 cup white granulated sugar
  • 1/2 cup sour cream (room temperature)
  • 1 tsp pure vanilla extract
  • 4 large eggs (room temperature)
  • 1/4 cup brown sugar (packed light or dark)
  • 1/3 cup all-purpose flour
  • 1/4 tsp ground cinnamon
  • 1 tbsp melted butter
  • 1 tbsp apple cider
  • 1/2 cup white granulated sugar
  • 2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). For the crust, mix graham cracker crumbs, brown sugar, and melted butter; press into a springform pan. Bake for 10 minutes.
  2. In a saucepan, reduce 2 cups of apple cider over medium heat until it thickens to 1/2 cup; let cool.
  3. In a bowl, beat cream cheese until smooth. Gradually add sugar, then incorporate sour cream, vanilla extract, eggs, and cooled apple cider until well mixed.
  4. Fold in a mixture of brown sugar, flour, and cinnamon until just combined. Pour over the crust and bake for about 80 minutes or until slightly wobbly in the center.
  5. Cool in the oven with the door ajar for one hour before topping with a cinnamon mixture and chilling in the fridge for at least four hours.
