  • ½ cup whole milk
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, mix flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, cream together softened butter and light brown sugar until fluffy. Add egg and vanilla; mix well.
  4. Gradually incorporate the dry mixture alternately with reduced apple cider until just combined.
  5. Drop spoonfuls of dough onto prepared sheets and bake for about 10 minutes until edges are golden.
  6. For filling, beat softened butter with milk until creamy; gradually add powdered sugar, reduced apple cider, and vanilla until smooth.
  7. Once cooled, spread or pipe filling between two cookies to form sandwiches.
