Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 4 medium Granny Smith apples, peeled and thinly sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Cream together softened butter and granulated sugar until fluffy. Mix in flour and salt until combined. Press into the prepared pan and bake for 15–18 minutes.
  3. Toss sliced apples with sugar, flour, cinnamon, and nutmeg in a bowl. Layer over the baked shortbread.
  4. Combine oats, flour, brown sugar, cinnamon, and salt in another bowl. Stir in melted butter to form crumbs; sprinkle over the apples.
