  • 1 Tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup (100 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • ½ cup (113 g) unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup (120 ml) milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F and line a muffin tin with paper liners.
  2. In a medium bowl, combine ¾ cup flour, ¼ cup brown sugar, 2 tablespoons granulated sugar, and optional cinnamon. Pour in 4 tablespoons melted unsalted butter and mix until clumps form; set aside.
  3. In another bowl, whisk together 2 cups flour, baking powder, salt, and 1 tablespoon cinnamon. In a large bowl, cream together ½ cup brown sugar and ¼ cup granulated sugar with ½ cup room temperature unsalted butter until fluffy. Beat in 2 eggs, ¼ cup sour cream (or Greek yogurt), and vanilla extract.
  4. Add half the dry mixture to the wet ingredients; mix until just combined. Stir in milk, then add the remaining dry mixture until incorporated. Fold in diced apples.
  5. Divide batter among muffin cups (3/4 full) and top with crumble mixture. Bake for about 20 minutes or until a toothpick comes out clean.
