  • 4 lbs chuck beef
  • 2 cups red apple vinegar
  • 1 cup beef broth
  • 1 whole onion (diced)
  • 1 cup carrots (cubed small)
  • 1 tbsp tomato paste
  • 1 tbsp thyme (dried or fresh)
  • 3 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the chuck beef generously with salt and pepper; let it reach room temperature for about 30 minutes.
  3. In a Dutch oven, heat olive oil over medium-high heat. Brown the seasoned beef on all sides (about 10 minutes). Remove and set aside.
  4. Sauté diced onion and cubed carrots in the same pot until softened (about 5 minutes). Stir in tomato paste.
  5. Add red apple vinegar and beef broth; simmer for a few minutes.
  6. Return the browned beef to the pot with bay leaves and thyme. Cover and bake for 2.5 to 3 hours, until tender.
