  • 4 lamb shanks
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 6 garlic cloves, smashed
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef stock
  • Fresh thyme and rosemary sprigs

Instructions

  1. Season the lamb shanks with salt and pepper.
  2. In a heavy-bottomed pot over medium-high heat, add olive oil and sear the lamb shanks on all sides until browned (about 4-5 minutes per side). Remove and set aside.
  3. In the same pot, sauté onions, garlic, carrots, and celery for about 5-7 minutes until softened.
  4. Stir in tomato paste and cook for an additional minute. Then add apple vinegar and beef stock, scraping up any browned bits from the bottom.
  5. Return the lamb shanks to the pot along with fresh herbs. Bring to a simmer.
  6. Cover and transfer to a preheated oven at 325°F (165°C). Braise for about 2-3 hours until tender.
