  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter, cold and cubed
  • 1 large egg, lightly beaten
  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the apricot filling by simmering chopped dried apricots with water and sugar until tender. Stir in lemon juice.
  2. Preheat your oven to 375°F (190°C) and prepare a baking pan.
  3. Make the shortbread crust by mixing flour, sugar, baking powder, and salt, then cutting in cold butter until crumbly. Add egg and vanilla extract.
  4. Press most of the mixture into the bottom of the pan, spread the cooled apricot filling on top, and crumble remaining dough over it.
  5. Bake for 30-35 minutes until golden brown.
  6. Allow cooling completely before cutting into squares.
