  • 1 lb dried pinto beans
  • 4 cups chicken stock
  • 1 bottle light beef broth
  • 2 cups water (plus more as needed)
  • 1 pound salt beef (or chicken bone or hocks)
  • 6 slices turkey bacon
  • 1 medium onion, chopped
  • 2 jalapeno peppers, seeded and finely chopped
  • 3 cloves garlic, minced
  • ½ cup fresh cilantro, chopped
  • 2 tomatoes, roughly chopped
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt (to taste)
  • 1 tsp black pepper

Instructions

  1. Soak the pinto beans overnight in water.
  2. Drain and transfer beans to a large pot; add chicken stock, beef broth, water, and salt beef or chicken bones.
  3. Simmer on low heat for 1½ hours while stirring occasionally.
  4. Cook turkey bacon in a skillet until crisp; set aside.
  5. Sauté onion, jalapenos, and garlic in the skillet until softened.
  6. Combine cooked turkey bacon and sautéed vegetables with the beans; stir in remaining seasonings.
  7. Simmer for another hour until beans are tender.
