  • 34 lbs organic chicken, skin removed
  • 23 tbsp Jamaican Green Seasoning
  • 2 tbsp Jamaican curry powder
  • 1 can full-fat coconut milk
  • 2 medium russet potatoes, peeled and cubed
  • 2 medium carrots, peeled and chopped
  • 1 medium bell pepper, chopped
  • 3 garlic cloves, minced
  • 2 tsp minced fresh ginger
  • 13 scotch bonnet peppers, to taste
  • 2 green onions, chopped
  • 2 fresh thyme sprigs
  • 1 cup organic chicken stock, low-sodium
  • 2 1/2 tbsp Jamaican curry powder
  • 1 tbsp Jamaican pepper sauce
  • 1 tsp ground allspice
  • Sea salt and black pepper, to taste
  • 4 tbsp extra virgin olive oil
  • 2 tbsp organic brown sugar
  • 1/2 tsp smoked paprika

Instructions

  1. Marinate the chicken in Jamaican Green Seasoning, curry powder, sea salt, smoked paprika, and On Everything All-Purpose Blend for at least 30 minutes in the fridge.
  2. Heat olive oil in a large pot over medium heat; sauté garlic and ginger until fragrant.
  3. Add marinated chicken to the pot and brown on all sides (5–7 minutes).
  4. Stir in coconut milk, chicken stock, brown sugar, cubed potatoes, chopped carrots, bell pepper, scotch bonnet peppers, green onions, thyme sprigs, and ground allspice.
  5. Bring to a gentle boil; reduce heat to low and cover. Simmer for about 30 minutes until chicken is tender.
