  • 2 hard-boiled eggs
  • 1 ripe avocado
  • 1 medium sweet potato, peeled and cubed
  • 1 tsp olive oil
  • Salt and freshly cracked black pepper

Instructions

  1. Preheat your oven to 200C (400F). Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet. Roast for 20–25 minutes until golden and tender.
  2. While sweet potatoes roast, bring a pot of water to a boil. Carefully add the eggs and cook for 8–9 minutes for hard-boiled or 7 minutes for soft-boiled. Cool under cold water before peeling and slicing.
  3. Slice the avocado and season lightly with salt.
  4. In a serving bowl, arrange roasted sweet potatoes, sliced eggs, and avocado. Finish with an extra sprinkle of black pepper before serving.
