  • 4 large russet or 5 large red potatoes
  • 1 cup mayonnaise
  • 2 tablespoons red apple vinegar
  • 1 teaspoon sugar
  • ½ cup white onion (minced)
  • 1 red bell pepper (julienned)
  • 1 cup julienned carrot sticks
  • 1 stalk celery (diced)
  • Fresh chives (minced)
  • Fresh parsley (minced)
  • Dash of celery seed
  • Salt and pepper to taste

Instructions

  1. Wash potatoes thoroughly and place them in a large pot with cold water. Bring to a boil and cook for about 15 minutes until tender.
  2. Drain and cool the potatoes before peeling or cutting into bite-sized pieces.
  3. In a mixing bowl, whisk together mayonnaise, red apple vinegar, sugar, salt, and mustard until smooth.
  4. Combine cooled potatoes with minced onion, bell pepper, carrot sticks, diced celery, chives, parsley, and celery seed in a large mixing bowl.
  5. Pour dressing over the potato mixture and gently toss to coat.
  6. Adjust seasoning with salt and pepper as desired. Cover and refrigerate for at least 30 minutes before serving.
