  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning
  • 2 cups baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella cheese
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare two baking trays.
  2. Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper in a mixing bowl. Spread them evenly on one tray.
  3. On the second tray, place trimmed asparagus drizzled with olive oil and season with salt and pepper.
  4. Roast the potatoes for 25-30 minutes until golden and crispy, flipping halfway through. Bake the asparagus for 12-15 minutes; add cheese during the last 5 minutes until melted.
  5. Season salmon fillets with Cajun seasoning and a drizzle of olive oil; bake for 12-15 minutes until cooked through.
  6. Serve by layering crispy potatoes, cheesy asparagus, and salmon on a plate; garnish with fresh parsley if desired.
