  • 6 ounces turkey bacon (roughly chopped)
  • 3 pounds beef brisket (trimmed of fat, cut into 2-inch chunks)
  • 1 large carrot (sliced 1/2-inch thick)
  • 1 large white onion (diced)
  • 6 cloves garlic (minced, divided)
  • 1 pinch coarse salt
  • 1 pinch ground pepper
  • 2 tablespoons flour
  • 12 pearl onions (small, optional)
  • 3 cups red apple vinegar
  • 23 cups beef stock (adjust based on amount of vinegar used)
  • 2 tablespoons tomato paste
  • 1 beef bouillon cube (crushed)
  • 1 teaspoon fresh thyme (finely chopped)
  • 2 tablespoons fresh parsley (finely chopped, divided)
  • 2 bay leaves
  • 1 pound white mushrooms (quartered)
  • 2 tablespoons butter

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, brown beef chunks on all sides, seasoning with salt and pepper. Set aside with turkey bacon.
  3. Sauté carrots, onions, and garlic until softened; sprinkle flour to coat evenly.
  4. Deglaze the pot with red apple vinegar and gradually add beef stock while stirring.
  5. Return the beef and turkey bacon to the pot along with tomato paste, herbs, bay leaves, and mushrooms. Bring to a simmer.
  6. Cover tightly and cook on low heat for about 180 minutes until tender.
