  • 10 g blood orange zest
  • 170 g whole eggs
  • 115 g heavy cream
  • 185 g cake flour
  • 3 g baking powder
  • 60 g neutral oil (vegetable or groundnut)
  • 50 g blood orange juice
  • 50 g sugar (for syrup)
  • 100 g icing/powdered sugar (for glaze)

  • 3 g powdered vegan gelatin (optional for chocolate cream)
  • 18 g cold water (optional for chocolate cream)
  • 100 g whole milk (optional for chocolate cream)
  • 135 g dark chocolate, melted (optional for chocolate cream)
  • 10 g glucose (optional for chocolate cream)
  • 200 g heavy cream (optional for chocolate cream)

Instructions

  1. Preheat the oven to 160C/320F. Grease a 2lb loaf tin and dust it with flour.
  2. In a bowl, combine the sugar and blood orange zest, massaging them together for one minute. Add the eggs and whisk for three minutes until thickened.
  3. Mix in the heavy cream until combined. Sift in the cake flour, baking powder, and salt gently.
  4. Incorporate the oil until smooth and pour into the prepared tin.
  5. Bake for 65-75 minutes or until a skewer comes out clean.
  6. Prepare syrup while baking by boiling sugar with water until dissolved. Soak the baked cake with syrup and chill overnight before serving.
  7. Optional: For chocolate cream, stir powdered vegan gelatin with cold water and let sit for 5 minutes. Heat milk and glucose, add dissolved vegan gelatin, and combine with melted chocolate and whipped cream.
  8. Prepare glaze by whisking icing sugar with lemon juice and blood orange juice.
