  • ½ cup cooked and crumbled turkey bacon
  • 6 large eggs
  • ¼ cup shredded white cheddar cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prick each sweet potato several times with a fork, coat with oil, sprinkle salt, and bake for 60-90 minutes until fork-tender.
  3. Slice the baked sweet potatoes in half lengthwise and scoop out the flesh into a mixing bowl.
  4. Add turkey bacon, butter, and cheese to the bowl; mix until combined.
  5. Stuff the mixture back into the potato skins, creating a small well in each.
  6. Crack an egg into each well and season with salt and pepper.
  7. Bake again for 15-20 minutes or until eggs are set.
