  • 1/3 cup Dutch-process cocoa powder
  • 1 cup (125 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips
  • 2 3/4 cups (345 g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (226 g) unsalted butter, cold and cubed
  • 3/4 cup (150 g) light brown sugar, packed
  • 2/3 cup (130 g) granulated sugar
  • 1 egg, plus 1 egg yolk, room temperature
  • 2 teaspoons vanilla
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F. Line two large baking sheets with parchment paper.
  2. In a stand mixer bowl, combine the butter and brown sugar. Mix for about 3 minutes until light and fluffy.
  3. Add the egg and vanilla; mix until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Sift dry ingredients into the wet mixture and mix on low speed until incorporated.
  6. Stir in chocolate chips using a spatula and set aside.
  7. In another stand mixer bowl, add cold butter, brown sugar, and granulated sugar. Mix on low speed then increase speed gradually; cream together for about 4 minutes until pale and fluffy.
  8. Add eggs one at a time, scraping down sides after each addition. Mix in vanilla extract.
  9. In a separate bowl, whisk together flour, baking soda, cornstarch, and salt.
  10. Gradually add dry ingredients to wet mixture in two parts; mix until just combined without overmixing.
  11. Stir in chocolate chips gently with a spatula.
  12. Use a small cookie scoop to portion out both doughs—make brownie balls slightly smaller than chocolate chip balls. Roll each type into uniform balls using your hands.
  13. Press one brownie ball against one chocolate chip ball; roll them together into one larger ball. Place on prepared baking sheets about 2 inches apart.
  14. Bake one sheet at a time for 8-9 minutes until edges are set but tops appear underbaked.
  15. Allow cookies to cool on sheets for 5-10 minutes before transferring them to wire racks.
