  • 2 cups cooked, diced boneless skinless chicken breast
  • 1/2 cup buffalo sauce
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup panko breadcrumbs
  • 2 green onions, sliced

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, sauté seasoned diced chicken until golden brown (about 5-7 minutes). Remove from heat.
  3. In a saucepan, melt butter. Add flour to create a roux and whisk until combined. Gradually add milk while whisking until smooth. Melt in cream cheese, then stir in cheddar and buffalo sauce until creamy.
  4. Combine the pasta, cheese sauce, and chicken in a large bowl until well coated.
  5. Transfer to a greased baking dish and top with panko breadcrumbs.
