  • 1 garlic head
  • 3 tbsp olive oil
  • 50 grams butter
  • 1 tbsp fresh parsley
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 1 tbsp honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 200 grams mozzarella cheese
  • 1 egg

Instructions

  1. Roast the garlic: Cut the top off a garlic head, drizzle with olive oil and salt, cover with foil, and roast at 160°C (320°F) for 2 hours until soft.
  2. Prepare garlic butter by mixing roasted garlic with softened butter and chopped parsley.
  3. Combine warm milk, yeast, and honey in a bowl; let it proof for about 10 minutes.
  4. In a mixing bowl, combine flours, sugar, milk powder (if using), softened butter, salt, two egg yolks, and the yeast mixture.
  5. Knead the dough with a dough hook attachment on medium speed for about 15–20 minutes until smooth.
  6. Let the dough rise in a covered bowl in a warm place for about 1 hour and 30 minutes or until doubled in size.
  7. Roll out the dough to about 0.25 cm thick; spread garlic butter and sprinkle mozzarella on top.
  8. Roll into a log shape and cut into six equal portions; let rise again for another 30 minutes.
  9. Preheat oven to 175°C (350°F), brush rolls with an egg wash, and bake for about 20–25 minutes until golden brown.
