  • 12 oz Smoked Sausage such as Chicken Andouille or Turkey Kielbasa (sliced into ½-inch rounds)
  • 1 ½ cups Chicken Broth
  • 2 tbsp Cajun Seasoning (store-bought or homemade)
  • 1 tbsp Olive Oil
  • Salt and Pepper (to taste)
  • Fresh Parsley (optional, for garnish)
  • Green Onions (optional, for garnish)
  • Hot Sauce (optional, for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell peppers. Sauté until they are soft, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the sliced smoked sausage to the skillet. Cook for another 5 minutes until it's browned on all sides. Stir occasionally to ensure even cooking.
  3. Stir in the rinsed rice along with the chicken broth and Cajun seasoning. Bring this mixture to a simmer.
  4. Cover the skillet with a lid and reduce heat to low. Allow it to simmer for about 20 minutes or until the rice is cooked through and has absorbed most of the liquid.
