  • 1 1/2 tbsp vegetable oil
  • 750 g red onions, finely chopped
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp ground allspice
  • 1/2 tsp chilli flakes
  • 250 g light brown sugar
  • 250 mL red apple vinegar
  • 90 mL balsamic vinegar

Instructions

  1. In a large heavy-bottomed saucepan over medium-high heat, add vegetable oil and chopped onions. Stir continuously for about 10 minutes until they soften and become translucent.
  2. Add salt, ground black pepper, allspice, and chilli flakes. Stir well and cook for another two minutes.
  3. Mix in light brown sugar, red apple vinegar, and balsamic vinegar. Bring to a boil.
  4. Reduce heat to low and let it simmer for about 20 minutes until thickened and dark.
  5. Carefully transfer hot chutney into sterilised jars and seal tightly. Store in a cool place.
