  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper, to taste
  • 2 cups jasmine rice
  • 4 cups water

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. In a large pot or deep skillet, heat vegetable oil over medium-high heat. Add chicken thighs skin-side down and cook until golden brown (5-7 minutes).
  3. Flip the chicken; add soy sauce, brown sugar, garlic, and ginger. Stir to combine.
  4. Pour in chicken broth to cover the chicken. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 20 minutes until cooked through.
  5. While the chicken simmers, rinse jasmine rice under cold water until clear. In another pot, combine rinsed rice and water; bring to boil then cover and reduce heat for 15-20 minutes until fluffy.
  6. Optional: For a thicker broth, mix cornstarch with water to create a slurry; stir into the broth and cook for an additional 2-3 minutes.
  7. Remove the chicken from the pot; slice after cooling slightly. Serve over rice with broth ladled on top.
