Ingredients

Scale
  • 1 sheet of puff pastry
  • 2 medium butternut squashes, peeled and diced
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 cup goat cheese (or feta cheese for a tangier flavor)
  • 1/4 cup heavy cream (or a dairy-free alternative)
  • 1 egg (for egg wash)
  • Optional: A sprinkle of red pepper flakes for heat

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss diced butternut squash with olive oil, salt, and black pepper. Spread evenly on a baking sheet and roast for 25-30 minutes until tender.
  3. In a skillet over medium heat, warm olive oil and add thinly sliced onions. Cook slowly for about 20 minutes until golden brown.
  4. Roll out puff pastry on a floured surface and prick with a fork to prevent bubbling.
  5. Spread caramelized onions over the pastry, layer with roasted squash, crumble cheese on top, drizzle with cream, and sprinkle thyme.
  6. Bake for 25-30 minutes until golden brown. Let cool for 10 minutes before slicing.
