  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • 115g unsalted butter or plant-based alternative
  • 100g brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 60ml coconut milk or whole milk
  • 200g finely grated carrots
  • 150g chopped pitted dates

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare your baking pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, cream together softened butter and brown sugar until fluffy.
  4. Add eggs one at a time and mix in the vanilla.
  5. Gradually incorporate dry ingredients alternating with coconut milk until just combined.
  6. Gently fold in grated carrots and chopped dates.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 35–40 minutes or until a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.
