  • 1.5 pounds lean ground beef
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2½ cups biscuit mix
  • 1 cup water
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 4 ounces diced green chiles
  • 1½ cups shredded cheese (Fiesta blend)
  • ½ cup salsa

Instructions

  1. Preheat your oven to 350℉.
  2. In a large skillet over medium-high heat, cook the ground beef until browned; drain excess fat.
  3. Add chopped onions and red bell pepper to the beef; cook until softened.
  4. Stir in taco seasoning and set aside.
  5. In a mixing bowl, combine biscuit mix and water; blend well to form the dough. Press into a greased casserole dish and bake for 5-8 minutes until lightly golden.
  6. Layer cooked beef mixture over the biscuit base.
  7. In another bowl, combine sour cream, mayonnaise, green chiles, garlic powder, and three-fourths of the cheese; spread over the beef layer.
  8. Top with salsa and remaining cheese.
  9. Bake uncovered for about 30 minutes until hot and bubbly.
