  • 2 tbsp (25 g) granulated white sugar
  • 2 eggs, whisked
  • 1 tbsp vanilla extract
  • 1/2 cup (112 g) unsalted butter, very softened
  • 1/3 cup (80 ml) heavy cream
  • 2 chai tea bags
  • 1/2 cup (112 g) unsalted butter, very softened (for filling)
  • 1 cup (220 g) light brown sugar, packed
  • 1 1/2 tsp ground cinnamon (for filling)
  • 3/4 tsp ground ginger (for filling)
  • 1/4 tsp ground allspice (for filling)
  • 1/4 tsp ground nutmeg (for filling)
  • 3/4 tsp ground cardamom (for filling)
  • 1/8 tsp ground cloves (for filling)
  • 1/3 cup (116 g) honey
  • 1 1/2 tsp vanilla extract (for filling)
  • 1/4 tsp salt (for filling)
  • 6 tbsp (84 g) unsalted butter, very softened (for frosting)
  • 6 oz (170 g) cream cheese, softened
  • 3/4 cup (97 g) powdered sugar
  • 1 1/2 tsp vanilla extract (for frosting)
  • 1/2 tsp ground cinnamon (for frosting)
  • 1/4 tsp ground ginger (for frosting)
  • 1/8 tsp ground allspice (for frosting)

Instructions

  1. Bloom the yeast by combining warm milk, active dry yeast, and sugar in a bowl. Let sit until frothy.
  2. In another bowl, mix flour, spices, and salt. Combine with the yeast mixture, eggs, vanilla extract, and softened butter using a stand mixer until smooth.
  3. Allow the dough to rise in a greased bowl until doubled in size (about 60 minutes).
  4. Prepare the filling by mixing softened butter with brown sugar and spices until smooth.
  5. Roll out the dough into a rectangle and spread the filling evenly.
  6. Roll up the dough and cut into 12 pieces; let them rise again for 30 minutes.
  7. Bake at 350°F (175°C) for about 30 minutes until golden brown.
  8. While baking, prepare the frosting by beating cream cheese and butter together with powdered sugar and spices.
  9. Frost the warm rolls before serving.
