  • 5 sage leaves
  • 1/4 cup Sweet onion
  • 16 ounces vegetable broth
  • 1 cup Orzo
  • 1/4 tsp allspice
  • 1 pinch cinnamon
  • 1/4 tsp cloves
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup cream
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • Sage leaves (for garnish)
  • Parmesan cheese (for garnish)
  • Fresh thyme (for garnish)

Instructions

  1. Preheat your oven to 400°F. Toss diced butternut squash with olive oil, salt, and pepper, then roast on a baking sheet for 25-30 minutes until tender.
  2. In a large pot, bring vegetable broth to a boil, then add orzo. Simmer for about 10 minutes until tender and absorbent.
