  • 4 boneless, skinless chicken breasts
  • 4 slices of chicken chicken ham
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 2 tbsp olive oil
  • 2 tbsp butter (for searing)
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound each chicken breast to about ¼ inch thickness. Layer with a slice of chicken ham and Swiss cheese, then roll tightly and secure with toothpicks.
  3. Dredge each roll in a mixture of flour, salt, and pepper, dip in beaten eggs, and coat with breadcrumbs.
  4. Heat olive oil and butter in a skillet over medium heat. Sear each roll for about 2–3 minutes on each side until golden brown.
  5. Transfer rolls to a baking dish and bake uncovered for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  6. For the sauce, melt butter in a saucepan, add flour, then gradually whisk in milk until smooth. Stir in Dijon mustard and Parmesan cheese; simmer until thickened.
  7. Remove toothpicks from cooked rolls, slice into rounds, drizzle with sauce, and garnish if desired.
