  • 4 cups shredded cooked chicken
  • 2 cups instant rice
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can diced tomatoes with chilies
  • 1.5 cups chicken broth
  • 1 packet fajita seasoning
  • 2 cups shredded Mexican blend cheese

Instructions

  1. Preheat the oven to 350°F and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine shredded chicken, instant rice, cream of chicken soup, sour cream, onion and bell pepper blend, undrained diced tomatoes with chilies, chicken broth, and fajita seasoning. Mix well.
  3. Fold in half of the shredded cheese until combined.
  4. Pour the mixture into the prepared baking dish and spread evenly. Cover tightly with aluminum foil.
  5. Bake for 35 to 45 minutes until rice is tender.
  6. Remove from the oven, uncover, top with remaining cheese, and return to bake until melted.
