Chicken Scampi with Garlic Parmesan Rice is a delightful combination of tender, pan-seared chicken breasts bathed in a rich, garlicky lemon-butter sauce, served over creamy parmesan-infused rice. This easy yet elegant dish is perfect for weeknight dinners or special occasions, boasting vibrant flavors and quick preparation.

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 3 tablespoons butter
  • 4 garlic cloves, minced
  • ½ cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped parsley
  • ½ teaspoon red pepper flakes (optional)
  • 1 cup white rice
  • 2 cups chicken broth
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon chopped parsley

Instructions

  1. Season the chicken breasts with salt, black pepper, and paprika. Ensure they are evenly coated for maximum flavor.
  2. In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken breasts to the skillet. Sear them for 5–6 minutes on each side until they are golden brown and cooked through. Once done, remove them from the skillet and set aside.
  3. In the same skillet, lower the heat and add butter along with minced garlic. Sauté for 1–2 minutes until fragrant. Pour in the chicken broth and lemon juice. Scrape up any browned bits from the bottom of the skillet. Add lemon zest and let it simmer for about 3–4 minutes.
  4. Return the seared chicken to the skillet and spoon some of the sauce over it. Let it simmer together for an additional 2–3 minutes to absorb flavors.
  5. In a medium saucepan, melt butter over medium heat and add minced garlic. Sauté briefly until fragrant. Stir in white rice and toast it for about 1 minute. Add chicken broth, bring it to a boil, then reduce heat to low. Cover and let it simmer for about 15 minutes or until rice is cooked.
  6. Once done, remove from heat and stir in freshly grated parmesan cheese along with chopped parsley into the rice until well combined.
  7. Serve your chicken over a generous scoop of garlic parmesan rice, spoon additional scampi sauce over chicken if desired, and garnish with extra parsley and red pepper flakes if you like a bit of spice.
