  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1 ½ cups white chocolate chips
  • ½ can sweetened condensed milk (7 oz)
  • ½ teaspoon mint extract

Instructions

  1. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing in the vanilla extract.
  2. Gradually add cocoa powder, salt, baking soda, baking powder, and flour; mix until just combined.
  3. Roll dough into 1-inch balls and place on a lined baking sheet. Press your thumb gently into the center of each ball to create a well.
  4. Bake in a preheated oven at 350°F for about 12 minutes. If the thumbprint disappears, press down gently after removing from the oven. Cool for two minutes before transferring to a wire rack.
  5. For the fudge filling, melt white chocolate chips and sweetened condensed milk in a saucepan over medium heat, stirring continuously. Stir in mint extract and spoon into each cookie's center.
  6. Melt chocolate almond bark and drizzle over each cookie. Allow to set before serving.
