  • ¾ cup unsweetened cocoa powder

  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tbsp vanilla extract
  • 1 cup hot coffee (or hot water)
  • 1 cup fresh orange juice
  • ½ cup sugar
  • 2 tbsp cornstarch
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 8 oz dark chocolate
  • 1 cup heavy cream
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, whole milk, vegetable oil, and vanilla extract; mix until smooth.
  4. Stir in hot coffee until combined.
  5. Divide the batter evenly between the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Allow cooling completely.
  6. For the orange filling, whisk together sugar, cornstarch, and egg yolks in a saucepan. Gradually add orange juice and cook over medium heat until thickened. Remove from heat; stir in zest and butter until melted. Cool completely before use.
  7. To make ganache, heat cream until steaming (not boiling), pour over chopped chocolate; let sit for two minutes then stir until smooth and glossy.
  8. Assemble the cake by placing one layer on a serving plate and spreading orange filling on top; repeat with remaining layers.
  9. Pour ganache over the assembled cake allowing it to drip down the sides.
