  • 2/3 cup white sugar
  • 1/2 cup softened butter
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract

  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 2 apples, peeled and chopped

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a small bowl, mix light brown sugar and cinnamon; set aside.
  3. In a large bowl, cream together white sugar and softened butter until creamy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. In another bowl, combine flour and baking powder; gradually add this to the creamed mixture alternately with milk until smooth.
  6. Pour half the batter into the prepared loaf pan; layer with half of the apples and cinnamon mixture. Repeat with remaining batter, apples, and cinnamon mixture.
  7. Bake for 30-40 minutes or until a toothpick inserted comes out clean.
  8. Cool for about 10 minutes before transferring to a wire rack.
