  • 45 pound bone-in turkey breast
  • 1/2 cup unsalted butter
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine softened butter with lemon zest, orange zest, herbs, garlic, salt, and pepper.
  3. Lift the skin of the turkey breast and spread half the butter mixture underneath; rub the rest over the surface.
  4. Place quartered onion, lemon slices, and orange slices in a roasting pan; pour chicken broth into the pan.
  5. Place the turkey on top of the aromatics and roast for about 1 hour and 40 minutes or until reaching an internal temperature of 165°F (74°C).
  6. Allow the turkey to rest for 15 minutes before slicing.
