  • 1 ½ lbs lean ground beef
  • 1 cup diced onion
  • ¾ cup breadcrumbs
  • ⅓ cup broth (or milk)
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.
  2. In a large mixing bowl, combine ground beef, diced onion, breadcrumbs, broth, eggs, tomato paste, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Form the mixture into a loaf shape by hand or press it into a greased loaf pan.
  4. Bake uncovered in the preheated oven for about 40 minutes.
  5. While baking, mix ketchup and white vinegar in a small bowl. After 40 minutes, spread the mixture over the meatloaf and bake for an additional 10 minutes until cooked through.
  6. Let it rest for about 10 minutes before slicing and serving.
