  • 2 lbs beef cubes (chuck or stew meat), trimmed

  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef or chicken broth
  • 2 tbsp vegetable or coconut oil
  • Curry powder, cumin, coriander, turmeric (optional), salt, pepper
  • Juice of lime
  • Fresh cilantro for garnish
