  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tbsp ground coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 2 tsp brown sugar
  • Juice of 1 lime

Instructions

  1. Prepare all ingredients: chop onion, mince garlic, grate ginger, and cut beef into cubes if necessary.
  2. In a Dutch oven, heat vegetable oil over medium heat. Sauté onion until translucent, then add garlic and ginger until fragrant.
  3. Add beef cubes and brown on all sides for about 5-7 minutes.
  4. Stir in red curry paste, ground coriander, turmeric, paprika, and optional cayenne pepper to coat the beef evenly.
