- 21 oz (600 g) cod fillets
- Salt and black pepper, to taste
- 1 cup coconut cream
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon honey or maple syrup
- 1 clove garlic, minced
- Preheat your oven to 375°F (190°C).
- Season the cod fillets lightly with salt and black pepper on both sides. Arrange them in a baking dish.
- In a mixing bowl, whisk together the coconut cream, lemon juice, lemon zest, honey or maple syrup, and minced garlic until smooth.
- Pour the coconut-lemon sauce over the cod fillets evenly.
- Bake in the preheated oven for about 20-25 minutes or until the cod flakes easily with a fork.
