  • Salt and black pepper, to taste
  • 1 cup coconut cream
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the cod fillets lightly with salt and black pepper on both sides. Arrange them in a baking dish.
  3. In a mixing bowl, whisk together the coconut cream, lemon juice, lemon zest, honey or maple syrup, and minced garlic until smooth.
  4. Pour the coconut-lemon sauce over the cod fillets evenly.
  5. Bake in the preheated oven for about 20-25 minutes or until the cod flakes easily with a fork.
