  • 2 TBSP Instant coffee
  • 2 1/2 cups All-purpose flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 tsp Salt
  • 1 tsp Ground cinnamon
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 2 Large eggs (room temperature)
  • 1 1/2 cups Semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and line two cookie sheets with parchment paper.
  2. Blend instant coffee in a food processor until fine.
  3. In one bowl, sift together flour, blended coffee, baking soda, baking powder, salt, and cinnamon.
  4. In another bowl, mix melted butter, brown sugar, white sugar, vanilla extract, and eggs until well combined.
  5. Gradually add dry ingredients to wet ingredients and fold in chocolate chips.
  6. Using a cookie scoop, place dough on prepared sheets. Optionally top each ball with extra chocolate chips.
  7. Bake for 12–14 minutes until edges are golden and centers are slightly underbaked.
  8. Allow cookies to cool on the pan for five minutes before transferring them to a cooling rack.
