  • 3 cloves garlic, minced

  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the chicken sausage, breaking it apart as it cooks. Drain excess grease if necessary.
  2. Add diced onion and cook for 3–4 minutes until soft. Stir in minced garlic and cook for another 30 seconds.
  3. Add the diced potatoes and chicken broth; bring to a boil. Reduce heat and simmer for about 15 minutes until potatoes are fork-tender.
  4. Stir in heavy cream and chopped greens; simmer gently for an additional 5 minutes until greens are wilted.
  5. Season with salt, black pepper, and optional crushed red pepper flakes before serving.
