Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • ½ cup cranberry sauce (preferably homemade or low-sugar)
  • 4 oz Brie cheese, cut into small pieces
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. On a cutting board, slice a pocket into each chicken breast without cutting all the way through.
  3. In a mixing bowl, combine the cranberry sauce, Brie cheese, thyme, garlic powder, onion powder, salt, and pepper. Fill each chicken pocket generously with this mixture.
  4. Heat olive oil in an oven-safe pan over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  5. Transfer the pan to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for a few minutes before slicing. Serve warm with extra cranberry sauce if desired.
