  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup liquid coconut oil (or canola/vegetable oil)
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan by greasing it.
  2. In a large bowl, combine the egg, pumpkin puree, both sugars, coconut oil, sour cream, vanilla extract, and spices. Mix well.
  3. Gently fold in flour, baking powder, baking soda until just combined.
  4. Pour two-thirds of the batter into the prepared loaf pan.
  5. In another bowl, mix softened cream cheese with granulated sugar and flour until smooth. Spread the filling over the batter in the pan.
  6. Top with remaining pumpkin batter and smooth lightly.
  7. Bake for about 48 minutes or until golden and set; check doneness with a toothpick.
  8. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely before slicing.
