  • 12 oz rotini pasta
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup Velveeta cheese, cubed
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup reserved pasta water (if needed)
  • 1 tablespoon chopped parsley (optional, for garnish)

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. In a skillet over medium-high heat, heat olive oil and 2 tablespoons of butter. Sear chicken until golden-brown (4-5 minutes per side). Remove and keep warm.
  3. Boil salted water in a pot; cook rotini until al dente. Reserve 1 cup of pasta water before draining.
  4. In the same skillet on medium heat, melt remaining butter and sauté minced garlic for 30 seconds.
  5. Add heavy cream; simmer gently. Stir in Velveeta until melted.
  6. Mix in mozzarella and Parmesan cheeses; adjust thickness with reserved pasta water as needed.
  7. Add cooked rotini to sauce and toss to coat well.
  8. Serve immediately with chicken arranged alongside.
