  • 1 lb boneless, skinless chicken breasts, cut into thick bite-sized chunks
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese, for sauce
  • 1 cup Velveeta cheese, for melting over chicken
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

Instructions

  1. Cook rigatoni in salted boiling water until al dente. Reserve ½ cup pasta water, drain, and set aside.
  2. Season chicken with Cajun seasoning, smoked paprika, salt, and black pepper. Heat olive oil and 2 tbsp butter in a skillet over medium-high heat. Sear chicken for 6-8 minutes until golden brown. Add half the garlic and another tablespoon of butter during the last minute.
  3. Remove chicken from skillet and keep warm.
  4. In the same skillet, melt remaining butter and sauté the rest of the garlic for 30 seconds. Pour in heavy cream and chicken broth; whisk in softened cream cheese until smooth.
  5. Stir in remaining cheeses until melted and creamy; season with Italian seasoning.
  6. Toss cooked rigatoni in sauce; use reserved pasta water if necessary for consistency.
  7. Serve rigatoni with the Cajun chicken on top; garnish with chopped parsley.
