  • 8 oz fettuccine or spaghetti
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 cup cream cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

  1. Boil water in a large pot, add salt, and cook pasta until al dente. Reserve some pasta water before draining.
  2. In a skillet over medium heat, warm olive oil and cook sliced chicken until browned (5-7 minutes). Set aside.
  3. Sauté minced garlic and diced onion in the same skillet until fragrant.
  4. Whisk together eggs, Parmesan, heavy cream, reserved pasta water, melted cream cheese, and lemon zest.
  5. Return chicken to the skillet with drained pasta and pour sauce over everything. Toss gently on low heat until creamy. Season to taste.
