  • 10 oz rotini pasta
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

Instructions

  1. Cook rotini in salted boiling water until al dente. Drain and reserve ½ cup pasta water.
  2. Season chicken with Cajun and Italian seasoning, salt, and pepper. Sear in a skillet with olive oil until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, sauté minced garlic in butter until fragrant. Add heavy cream and cheeses; stir until melted and smooth.
  4. Toss cooked rotini in the sauce until well coated. Add reserved pasta water as needed for desired consistency.
  5. Serve the creamy rotini alongside the seared chicken garnished with fresh parsley.
