  • 7 oz halloumi cheese, cubed
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1½ cups cherry tomatoes, halved
  • ½ cup heavy cream
  • ¼ cup reserved pasta water
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup fresh basil leaves, torn

Instructions

  1. Cook the short pasta in salted boiling water according to package directions; reserve ¼ cup pasta water before draining.
  2. In a skillet over medium heat, add olive oil and fry halloumi until golden brown on all sides. Remove and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  4. Add halved cherry tomatoes and cook until softened.
  5. Pour in heavy cream and reserved pasta water; stir to combine into a smooth sauce.
  6. Toss in the cooked pasta to coat evenly with the sauce.
  7. Return halloumi to the skillet along with torn basil leaves; toss gently to combine.
  8. Season with salt and black pepper; heat through for another minute before serving.
