  • 2 lbs chicken, cut into thin strips
  • 2 tbsp butter
  • ½ cup chicken stock
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • ½ cup pepperoncini peppers, drained
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • 1 tbsp Italian seasoning
  • ½ cup roasted red pepper, drained and sliced

Instructions

  1. Season the chicken strips with sea salt and ground pepper.
  2. In a large skillet, melt butter over medium-high heat and cook chicken until browned (6-8 minutes). Remove and set aside.
  3. Sauté diced onions and garlic in the same skillet until golden (3-4 minutes).
  4. Add chicken stock and roasted red peppers; reduce by half (5 minutes).
  5. Turn off heat, stir in heavy cream and Parmesan until smooth.
  6. Return heat to medium; add Italian seasoning and pepperoncini.
  7. Combine chicken with sauce and simmer until fully cooked (5 minutes).
  8. Serve hot over rice, pasta, or vegetables.
