  • 12 oz fettuccine or spaghetti
  • 1 cup grated Parmesan cheese
  • 3 large eggs
  • 1 cup whole milk or half-and-half
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of pasta water.
  2. In a skillet over medium heat, heat olive oil and sauté the diced chicken seasoned with salt and pepper until browned (6-8 minutes). Set aside.
  3. In a mixing bowl, whisk together eggs, grated Parmesan cheese, whole milk, minced garlic, salt, and pepper until smooth.
  4. Return cooked pasta to the skillet with chicken. Pour in the egg mixture while quickly tossing everything together. Add reserved pasta water gradually for desired creaminess.
